..Cobb Salad

If you know me well, you know I really don't like salad. I find it so completely unappetizing that one of the only ways you can get me to eat willingly is by slapping bacon on it (which in the same turn cancels out any actual health benefits). This is why I like Cobb salad. It has many of my favorite characters at the table; (turkey) bacon, avocado, blue cheese crumbles, egg, spicy ranch dressing, and I decided to add in some fresh cooked corn. Sprinkle on some grilled chicken over crisp spinach and even I'm sold on salad for dinner tonight.
Last night I just didn't feel like putting together a blog post. This unfortunately has been happening somewhat regularly in the last month and I'm beginning to feel that I'm spreading myself a bit too thinly. Do you guys ever feel like your "free" time is so riddled with date nights, promises to friends, and other obligations that you don't have any time to just get back to neutral? I look at my iCal that's speckled with appointment dots with sadness sometimes because I miss time alone with myself, especially now that I am a co-habitator of over a year now. When Mike had his fantasy draft last night it meant that I had the house alone to myself for a few hours. The last thing I wanted to do was sit on the computer, so I didn't. I hope you guys can forgive my post-slacking booty but I just needed a little "me time." Back to regularly scheduled programming tomorrow.

This little red number is what I decided to wear to my third (but not final) wedding of the year. It was held in the cutest little historic village in NJ (I know I didn't know such a thing existed either). We stayed in a fancy barn and they had a tiny little train that ran throughout the half-mile wide town that you could hop on and off of. Red just seemed like the right color for the occasion.
Whilst I was returning something at J.Crew with no intentions of buying anything (which is an inordinately hard task, I underestimated my weakness for bright classic pieces with a modern twist - blast you J.Crew!), I saw it and just knew it would go splendidly with what I have dubbed as my "crazy-heavy-goes-with-EVERYTHING-necklace," which is exactly the problem. I want to wear this necklace all the time because 1. it quite literally matches every color in my closet and 2. I don't see a million other people rocking it like some other pieces I have purchased in the past *cough cough*bubble necklace*cough cough.* Any suggestions for places that I can get some new statement pieces that I wont see on every other style blogger that also wont break the bank? Is that too much to ask? I'm curious!
I've been seeing these lady like greenish-yellow pointy toed shoes everywhere! I don't have a very fashionably trained eye, but I thought this color was more for spring/summer. That being said, I am so excited to see that some muted pastels are trickling into fall since they are my favorite palettes! I think I may need to get me a pair.

Remember all that talk about how my sister and I lounged poolside gloriously in the middle of the week? Well prepare to be jealous, because this is the view from my rooftop pool! Amazing, I know. Too bad I have to work a Monday-Friday like a sucker and only get to see it a handful of times a summer with my crazy weekend schedule. It was nice to actually reap the benefits of my building while sipping on mini pinot grigio bottles, catching up with the sis, catching rays, and blasting the country Pandora station. Bliss!

I had such an awesome time having my sister Kaylin all to myself for a few days down here form NJ. I took off from work for the whole week in between weddings and we lounged by the pool, had not one but TWO amazing Mexican dinners, shopped, got pedis, and just did all the mandatory sisterly things that I miss. You know what one of the best parts of having one is? Getting to raid their closets. I totally stole this top out of her suitcase and she didn't even mind one bit. That's love.

My sister is in town visiting for a few days until I have to go back up to NJ on Friday for a wedding and although fall fashion is noticeably on everyones minds, I think when going out to have Mexican in the midst of summer, you need to get decorated in your brightest summer attire and go at it. Hope everyone is having an amazing week!
Also known as the best cupcake I've ever made.
I don't know about you guys, I know it's sortof one of those love it or hate it things, but I LOVE coconut. Almond Joys are my hands down favorite candy bar and let's not even get started on the Samoa girl scout cookie. When a friend's birthday rolled around I wasn't quite sure what to make. He really liked the icing from my pineapple coconut cupcakes, but said his favorite candy was just plain dark chocolate which lead me to this little brain child (although I'm sure it's been done before as all cupcakes have). I made these in mini version as they are pretty high on the calorie scale and I knew I wouldn't be able to eat just one.
For the icing
1/2 stick butter
8 oz cream cheese (one package)
1 1/4 cups sweetened shredded coconut
1 teaspoon vanilla extract
3 cups powdered sugar
Beat butter and cream cheese together until well combined. Add vanilla and powdered suger (about 1 cup at a time) until well combined. Then add your coconut in and mix.
For the cupcakes
1 box Devil's Food cake mix
4 eggs
2/3 cup veggie oil
1 chocolate instant pudding
1 cup almond milk
1/2 cup sour cream
1 teaspoon vanilla extract
Bake on 350 degrees for about 17-20 mins.
Assembly
1. Bake your cupcakes and let cool.
2. Ice your cupcake with the coconut frosting and make sure the tops are pretty rounded.
3. Melt dark chocolate chips on defrost setting in microwave until smooth then dip each cupcake in chocolate.
4. Sprinkle coconut flakes on the top of each for fun and let set. They were really delicious after being in the refrigerator or a while.

Excuse me for being MIA yesterday, in the midst of a fabulous celebration of two very good friends getting hitched I decided to take the day off and spend extra time in New Jersey with family while I was up there. The weekend was so amazing! From the rehearsal dinner complete with the most fabulous Italian fare and a slide show, to the amazing day we spent drinking champagne and taking pictures on the beach, and mostly just getting to spend a well deserved and absolutely indulgent (in the best way) amount of time with great people. Here are some snaps I was able to get in the middle of all the excitement. isn't the bride such a babe?

Sometimes all you need to do to breathe new life into a really old simple piece like this cobalt blue strapless mini-dress is add a fun scarf. I'm a bustier shape so anything that adds a bit of modesty to an otherwise "sexy" cut dress is golden in my book. Don't you just love the bright jungle-y feeling of this one? D*MILIKAH is a fun Brazilian designed brand that focuses on swimwear for the "real girl" which is a concept I find refreshing and absolutely love. Okay, I know this is not the most glamorous topic, but I thought it would be a helpful one. We all get these pesky blemishes once and a while, especially during stressful times (unless you are one of those totally annoyingly lucky people that just has beautiful glowing skin all the time), and I thought you all might want to know my tricks of the trade. I don't know if you guys know this, but I don't have Photoshop or anything like that so if I have a zit, I have to cover it the old fashioned way. And while digital touch up is great, it's WAY more important to look and feel good in the flesh. Here is how I create the optical illusion you see above, and it is au-natural, not edited, promise!
- Make sure the area is really well moisturized. I would even exfoliate in the shower then apply a really great moisturizer right after. Makeup in general doesn't sit well on dry skin, this is even more applicable for broken out skin.
- Using your ring finger, gently blot a concealer that is your exact skin match onto the spot over and over until completely blended. Never rub it into the skin!
- Take a translucent setting powder and again using your ring finger, blot over the area gently. Bobbi Brown actually makes a creamy concealer kit that comes with both (which is what you see here). You can repeat steps 2 and 3 once more if you want even more coverage.
- With a makeup sponge, gently blot off any excess product. Voila! You are now ready to go back out in public!
I have been seeing so many versions of crimson platform mary janes coming out for fall that when I saw these babies at target I just knew I would see the exact version at a much higher price any day. Low and behold, I found just what I thought I would at Piperlime just a week later. So cute!
I have been seeing nail-polish jewelry everywhere and being that I have a pretty extensive Essie collection myself, I wanted to give it a try. I walked to the Claire's accessories store in the mall across the street and got all the loot you see below (minus the earrings, I scored those in the reject pile at Fornash) for ten dollars! Not only was this the easiest DIY ever, it was pretty darn cheap! All you need are some rhinestone pieces that you don't care about ruining and some polish. See some of my creations below.
