This constant snow has had me in soup mode. I also am trying to eat a bit healthier these days so this recipe is sans the actual tortillas. Obviously you can add them but it was really good all on its own. I had never made this soup before so I'm sure you could find a more legit recipe somewhere on the internet, as I just dropped items I thought went into it into my cart at the grocery store and just rolled the dice, but it's super easy and tasty.
Ingredients
1 tablespoon EVOO
1 roasted chicken
1 small onion
1 can white corn
1 can black beans
1 green bell pepper
1 red bell pepper
1 can diced tomatoes
8 cups chicken stock
garlic salt, pepper, & cumin
Optional: Avocado, shredded Mexican blend cheese, sour cream
In a large pot add a little EVOO around the bottom and throw in your diced up onions and peppers. season them with a little garlic salt, pepper, and cumin. After about five minutes of them in there on their own add in the corn, beans, and tomatoes. While that is blending in the pot remove all the meat from your roasted chicken and chop into bite sizes. Add that to the pot. Season a bit more and then add in the chicken stock. Let it simmer for about 20 minutes and you are ready to garnish and serve.

This J.Crew chambray is actually the second one I have gone through because it's the hardest working top I own. I did plan on wearing a cute little Valentine's day outfit for my date night at Water & Wall but when the temps dropped to WTF-reezing I decided that a fancy sweatshirt was as glam as I was going to get. I of course still rocked heels because, really, can it ever be bad enough to forgo your dignity? Just kidding, kinda.
1. As you know, I have already converted to Washio for my laundry which is the most amazing app in the world. I now also use Instacart to have my groceries delivered! While I do have a Harris Teeter close it's nice to be able to have Whole Foods products I love delivered right to my door. I am a true city girl now.
2. I am on a health kick. I got a trainer so I obviously needed new kicks to go with. Right?
3. How genius is this makeup brush drying rack? I always use a little J&J baby shampoo to wash mine and have to figure out weird ways to get them vertical for drying. This is a game changer!
4. Invisibilia is my new favorite podcast. It explores the intangible forces that shape human behavior – things like ideas, beliefs, assumptions and emotions. I always feel smarter after listening.

We had a snow day here in the DC area and I got to sleep in, make homemade soup, catch up on DVR'd shows and just enjoy life in general with my main man. There is nothing that tops a three day weekend like a surprise four day weekend! Also - this parka was the best purchase I made all winter. They say the second most important question(s) after your man pops his is asking your bests to stand by your side on your wedding day. As someone who is borderline the real life Katherine Heigl in 27 Dresses (not in a bad way - I just consider myself experienced in that department), I absolutely love how creative my friend got in her approach to doing this. How stinking adorable are these "bridesmaid survival kit" themed gift boxes? Surprising your favorite ladies with an unexpected treat is of course not necessary (the sentiment of being asked is sweet and wonderful enough) but an extremely thoughtful and lovely gesture.

You guys. I got this sweater on Piperlime for literally $8 which makes me suh happy but after hearing they are closing I feed so majorly SAD! They are one of my all time favorite retailers! Also - don't you love my custom "Be silly. Be honest. Be kind." bracelet? You can get anything your little heart desires printed on one (they make such adorable bridal/bridemaid gifts) but since I was just getting one for myself I thought it would be nice to look down and see words I like to live by everyday, kind of like a daily affirmation of sorts. When I first heard about Alex & Ani, I thought immediately that their jewelry designs make awesome gifts. My sister initially introduced me to the brand when she got me two bangles last Christmas. ..A Parisian Engagement

I know what you are thinking, "wait that's not Erin in those amazing pictures.." so first I must disclose that this is not MY engagement story, it's my best friends. However, I did play a small role in this grand surprise so I want to share it on here anyway.
It was a cold November night when my bestie's boyfriend sent an email to me stating that he needed my help. As her birthday was also at the end of the month I didn't want to jump the gun and assume it was engagement related but deep down I hoped. We sat down to dinner and he nervously blurted out that he was going to ask Lauren to marry him and later proceeded to whip out a little checklist of things he wanted to discuss, adorableness.
Lauren and Brian had a pretty awesome trip coming up which included a few days in London and a few days traipsing around the romantic city of Paris. He had already bought a ring and get this: CALLED A PROFESSIONAL PARISIAN ENGAGEMENT PHOTOGRAPHER (yes you read that right) to capture the moment he was going to surprise her on the bridge over the Seine. Even better, this photographer was going to spend the day driving them around to different classically Parisian spots to take more adorable once in a lifetime pictures. This is where I make my small cameo. Brian realizes that girls are picky animals and probably prefer to be rocking a new and fun outfit to take engagement photos in but as she didn't know they were taking them, she probably wouldn't think to pack such an outfit. He then gives me a budget to find her a few new outfit options that we send off to Paris the week before so that after he popped the question, she got to go back to the hotel and open up a package that contained three different new looks to choose from.
