So yesterday it snowed. Big chunky flakes fell to the ground as I sat in my cubicle. Our new office has floor to ceiling windows so I really felt like I was on the inside of a snow globe! What's better than soup on a cold day? Well I'll tell you - nothing! (bold statement, I know). I stole this recipe idea from one of my new favorite foodie blogs The Douglas Kitchen Odyssey which is written by one of good friends and old roommates. I used to reap the benefits of her culinary curiosity (mwahahaha..) but now that she went and got married I just have to settle for the virtual experience or attempt her (and her hubby's) recipes myself!
Rosanne and Sean are seriously talented cooks. They love to dive into all kinds of bold flavors and techniques and really do it well. You can find the recipe I swiped here. It was super tasty, not too hard, and just what I was hankerin' for. I threw some avocado on there for garnish just because I was in the mood for it but it actually went really well! The soup warmed it up and made it really creamy. I did slightly alter the recipe by reserving 1 of the cans of black beans for after the soup is blended to add a little chunk to the consistancy. I can't wait to go home and eat the leftovers for dinner tonight. Thanks, guys!
I'm not usually the biggest fan of beans but this soup looks delish! I'm definitely going to try out the recipe (with the avocado for sure). Thanks for sharing!
