..Cookie-Dough Filled Cupcakes



My cousin was in town to visit this weekend and making cupcakes with me was on her bucket list of things to do together.  Since cookie-dough is her favorite ice cream we decided to make it into a cupcake.  I have seen recipes that call for freezing balls of dough and dropping them in the batter, but I find the dough gets a little dry and I didn't have much luck.  I instead tried my own version which came out great!  I just made chocolate cupcakes according to box instructions (or you can make from scratch).  Carved out a "V" from the center of the cupcake and filled with an egg-less cookie dough (below). Frosted with this icing and topped with mini chocolate chips.  They were even better tasting after being in the refrigerator for a while!

Egg-less Cookie Dough
1 stick softened butter
1 tablespoon vanilla extract
3/4 cup mini chocolate chips
3/4 cup packed brown sugar
1 cup flour
1/2 teaspoon salt

  6. Ooooh those look so good! I tried something like that once with funfetti cupcakes and they didn't turn out nearly as beautiful as yours. Mmm I could just lick the computer screen.....(weird? Maybe.)
