Last Friday was Mike's birthday and of course I had to make him some kind of insanely delicious rich new cake to celebrate. He told me he wanted a mint Oreo flavor but there didn't really seem to be any recipes out there for one so I just decided to make the most amazing chocolate cake I've found to date (last seen here) and add mint Oreo's to the batter. I layered the bottom tier with a coat of mint Oreo cream cheese frosting and half a cookie. The result was this monstrosity. He's been eating it for breakfast and dinner for the last four days so I think it was a success! It reminds me of the chocolate cake from the movie "Matilda" for some odd reason.
Cake
1 box Devil's Food cake mix
4 eggs
2/3 cup veggie oil
1 chocolate instant pudding
1 cup almond milk
1/2 cup sour cream
1 teaspoon vanilla extract
1 sleeve broken mint Oreos
Bake on 350 degrees for about 17-20 mins.
Icing
1.5 packages cream cheese
1.5 sticks butter
1 teaspoon peppermint extract
4-5 cups powdered sugar
2 granulated mint Oreos
Blend cream cheese, butter, and extract until smooth then add in powdered sugar one cup at a time. Fold in Oreo crumbs.
