Mike made these absolutely delicious oatmeal chocolate chip cookies the other night when we were craving something sweet but didn't want to be too over indulgent. They are low fat and tasty so they got our stamp of approval. Try 'em out!
Ingredients
1 cup
all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 tablespoons butter, room temperature
1/2 cup white sugar
1/2 cup brown sugar
1 large egg
1/4 cup plain unsweetened applesauce
1/2 teaspoon vanilla extract
2 cups quick-cooking oats
1 cup chocolate chips
Directions
1. Preheat oven to 350F and line a baking sheet
with parchment paper.
2. In a medium bowl, whisk together flour,
baking powder, baking soda, salt and cinnamon.
3. In a large bowl, cream together the butter
and the sugars. Beat in the egg, followed by the applesauce and the vanilla
extract. Working by hand, stir in the flour mixture and the oats until just
combined and no streaks of flour remain. Stir in the chocolate chips.
4. Drop tablespoonfuls of the dough onto the
prepared baking sheet, flattening each cookie slightly. Bake for about 10-12 minute Cookies will be
light brown at the edges when done.

Those look delicious. I make some pretty good oatmeal chocolate chip cookies, but they're not low fat like yours!

I think chocolate chips are about 100 times better than raisins in oatmeal cookies. I've never understood the raisin thing. These look delicious.
