I volunteered to make the cupcakes for a coworkers wedding shower at the office. I thought that champagne was such a fitting flavor for the cake because it just seems to have a celebratory ring to it and what goes better with champagne than strawberries, right?
Champagne Cupcakes
1 box white cake mix
3 egg whites
1/3 cup veggie oil
1 1/4 cups champagne
Mix all ingredients together and bake at 350 degrees for 17 to 22 minutes.
Strawberry Butter-Cream Frosting
3 sticks of butter
3 cups powdered sugar
teaspoon of vanilla
3/4 cup strawberry preserves
Beat butter and vanilla until creamy, then gradually add in powdered sugar one cup at a time. Add preserves and mix until everything is well combined. I added some pearly sprinkles for a touch of wedding-ness.
This looks so good! My husband actually bought me a strawberry champagne cupcake for one of my Valentine goodies last month and it was wonderful! I'm going to bookmark this post so I can try it myself sometime!
