..Creamy Pumpkin Soup

Mmm... tastes like November :)

I actually did exactly what I planned on last night (pumpkin soup and my favorite Halloween flick).  My soup came out fabulously! I have never attempted this dish before so I read up on a bunch of different ways you can make it and decided to go with a simple version (and then added a little of my own preferences).

I followed this recipe almost exactly with a few minor adjustments.

1. I wanted to make sure it was nice and hearty so I chopped and boiled two potatoes until fork tender and then added them to the onion mixture at the same time as the chicken broth (so they could fully melt into the soup).

2.  In addition to the cinnamon, salt, and pepper, I added a pinch of cloves, ginger, and nutmeg.

3.  I didn't puree anything.  I just chopped the onion very finely for a tiny bit of texture.

4.  I cooked 6 slices of bacon to for garnish (roughly chopped) with parsley which was SO GOOD!
