..Green Beans with Crushed Almonds

This is probably one of my all time favorite ways to consume vegetables.  Green beans are a pretty non-offensive health food to begin with (who can really hate on them?) but with the addition of crushed almonds they really turn into a magical food.  Great way to get your iron AND some protein - hooray! Super easy recipe below.

Ingredients
1/2 cup raw unsalted almonds (crushed or chopped via a food processor).
1.5 lbs of fresh green beans (trimmed and washed) .
2 tbsp extra virgin olive oil or (EVOO)
Salt, Pepper, dash of garlic powder.

Directions
Drizzle your EVOO around the pan on medium heat.  Toss in your green beans and dash a little salt, pepper, and garlic powder over them. Move them around the pan until they are pretty evenly coated with the EVOO. Cook for 5 minutes on their own and then toss in the crushed almonds.  Cook for 5-7 more minutes on the same medium heat until the beans are slightly tender and the almonds are toasted. Enjoy!

  5. I always see this dish in restaurants, but I've never tried it myself. I love green beans (especially sauteed) so I'm excited to try this!
